Fun Frozen Recipes for Spring

Are you itching for warmer weather? Spring is here! For National Nutrition Month, we are excited to share two fun recipes for sweet (and healthy) frozen treats to give you a little taste of summer and soothe your spring fever. 

This recipe for homemade fruit & yogurt popsicles is a super fun and easy way to keep cool as the weather starts to warm up.  

 Ingredients:  

  •  2 ripe bananas 
  • 1 cup of fresh fruit chopped finely (strawberries, mango, peaches, or pineapple all work well!) 
  • ½ cup plain Greek yogurt (to mix up the recipe, try flavored yogurt!) 
  • Optional: 2 Tbsp honey or sugar

Directions:

  1.  Combine all ingredients in the blender until smooth, adding in honey or sugar as needed. 
  2. Pour into popsicle molds, small paper or plastic cups, or lined muffin tins.
  3. Insert a popsicle stick or small spoon and freeze for 4 hours or until hard. 
  4. Remove from mold & enjoy!

This delicious “ice cream” requires only five ingredients and is vegan friendly! 

 Ingredients: 

  • 1 ½ cups frozen strawberries, blueberries, or bananas 
  • 1 cup almond, oat, or soy milk 
  • ¼ cup cocoa powder  
  • 4 pitted dates 
  • 1 tsp. Vanilla extract 

Directions:

  1. Combine all ingredients and blend in a blender until the “ice cream” becomes smooth and creamy. 
  2. If it’s too runny, add more strawberries; too thick, add more milk.  
  3. Add whatever toppings you’d like!
