The GiGi’s Playhouse Annapolis cooking team are excited to see you all! Today we will be working on our food prep skills while preparing Greek Burgers in Pita. YUM!

 

INGREDIENTS: 

FOR LAMB BURGERS 

  • 1 slice white bread, crust removed and cut into 1/4-inch pieces 
  • 2 tablespoons milk 
  • 1/4 cup finely chopped shallots, from 1-2 shallots 
  • 2 cloves garlic, minced 
  • 1 teaspoon dried oregano 
  • 3/4 teaspoon salt 
  • 1/2 teaspoon freshly ground black pepper 
  • 1-1/2 pounds ground lamb (not lean) or ground meat of your choice (beef, pork, chicken, turkey) 
  • 6 pita bread rounds*(There are two types of pita bread – pita pockets and pocketless pitas. You can use either for this recipe. For pita pockets, be sure they are at least 6 inches wide. Trim off the top ¼ of each round and stuff the burgers and toppings inside. For pocketless pitas, serve burgers open-faced or, if pitas are large enough, wrap them around burgers.) 

Tzatziki Sauce  

INGREDIENTS: 

  • 2 cups grated cucumber (from about 1 medium 10-ounce cucumber, no need to peel or seed the cucumber first, grate on the large holes of your box grater) 
  • 1 1/2 cups plain Greek yogurt 
  • 2 tablespoons extra-virgin olive oil 
  • 2 tablespoons chopped fresh mint and dill 
  • 1 tablespoon lemon juice 
  • 1 medium clove garlic, pressed or minced 
  • 1/2 teaspoon fine sea salt 

Avocado Corn Salad 

Ingredients: 

  • 1 pound cherry tomatoes halved or quartered 
  • 3 ears of cooked corn (shucked and cut off the cob) or 2 cups frozen corn, defrosted 
  • 2 avocados peeled, pitted and sliced 
  • 1/2 red onion (medium) thinly sliced 
  • 1/4 cup cilantro chopped (1/2 small bunch) 
  • 2 Tbsp extra virgin olive oil 
  • 2 to 3 Tbsp lime juice from 1 to 2 limes 
  • 2 garlic cloves pressed or finely minced 
  • 1 tsp sea salt (optional) 
  • 1/8 tsp black pepper (optional) 

 

GiGi’s Kitchen is designed to emphasize the importance of health and wellness through nutrition education, kitchen safety, food preparation, social activities and a shared meal/snack. Under the guidance of program leaders, participants will learn about and progress through skills including measurements, food handling, knife skills, ingredient identification, palette expansion, and nutrition. Participants will be introduced to various cooking techniques. The GiGi’s Kitchen program will build participants self-esteem and self-confidence through nutrition and wellness!
